Simple Mediterranean Diet Recipes for Breakfast

In the Mediterranean Diet Menu Plan, breakfast isn't that big of a deal. In France, Italy and Spain, for instance, the morning meal can be as simple as a strong cup of coffee and a sweet bread such as a croissant. Unfortunately, most of us probably need a little more to get us going.

You can make a great breakfast with a simple combination of dairy, fruits and grains such as yogurt with fresh berries, unsweetened granola and honey. Use whole rather than low or non-fat yogurt, otherwise you'll never make it through to lunchtime. If you're more of a cereal person, look for an authentic European muesli. They're packed with hearty nuts and grains that will stick to you much better than a bowl full of flakes will.

Eggs are also another great addition to your Mediterranean Diet Meal Plan. Vegetables sautéed in olive oil can really wake up a simple scramble. There's no end to the combinations you can create: olives, roasted peppers, onions, sun-dried tomatoes, fresh spinach, feta cheese, or whatever you're bold enough to try.
