Quick Chicken Kebab Over Basmati Rice With Spinach

Here's a perfect summertime Mediterranean Diet meal with a Middle-eastern flair. I've found other delicious Mediterranean Diet menu recipes in my copy of the Mediterranean Diet Meal Plan.

Ingredients
  • 4 ounces chicken breast cubed
  • 4 tbsp lemon & herb dressing
  • 4 small mushrooms
  • 4 1" square pieces of onion
  • 4 grape tomatoes
  • 2/3 cup cooked basmati rice (for quick cook time use couscous)
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 tsp butter

Quick Cooking Instructions (Time: 15 minutes)

Purchase a premade chicken kebab from your grocery store or packaged grilled chicken from your deli dept. Toss mushrooms, onion, and tomato with lemon & herb dressing, place in a microwave safe bowl, and cover with plastic wrap. Microwave for 3-4 minutes, or until tender. Skewer chicken and vegetables. Heat spinach in microwave (either frozen or purchase bagged, microwave spinach). For a quicker cooking grain, use couscous. Serve skewers over rice or couscous, with spinach on the side.

Regular Cooking Instructions

Preheat oven to 450 degrees. Cut chicken breast into 1" cubes. Baste with lemon & herb dressing and alternate chicken, mushrooms, onions, and grape tomatoes on skewer. Bake in oven for 5 minutes or grill.

For Basmati Rice

Prepare as directed on package without added fat and melt butter into rice after cooked.

For Steamed Spinach

Use 2 cups fresh spinach or one cup frozen. Place in covered pot with water and steam until spinach cooks down.
